It has been a delightful week so far.  I toured three farms in 24hrs., met wonderful farming families, camped on a cocoa farm, and witnessed how much work it takes to get folks the goods. Time well spent.

We have a tasty green theme going on this week on Oahu.  We have green beans, green onions, & green peppers.  Other inspiring items are the yacon and/or kohlrabi folks on Oahu will be getting.  Yacon is a sweet tuber that looks like a sweet potato and can be eaten raw.  Kohlrabi is a member or the cabbage family and can be eaten raw as well. Both yacon and kohlrabi can be cooked & roasted too.  I plan to make a salsa with both of them using the cilantro Oahu will be getting.

Maui folks…you are getting zucchini.  I LOVE zucchini!  I realize that it isn’t everyone’s favorite, but it is so versatile that there is no reason to get bored with it. My favorite new way to have it is as zucchini noodles.  I picked up a spiralizer from Amazon.com.  I have the kids wash, spiralize, and salt.  We salt the noodles and let sit for about 20 minutes or so to pull out the moisture just like we do eggplant. Then we rinse, drain, and pat dry.  Then we either top with our Artisan’s Reserve Fire Roasted Tomato Basil Sauce to which we add meat and other veggies or we use the Kumu Farms Pesto Sauce.  I’ve been scoping out recipes for Pad Thai and a Shitake Mushroom with Baby Bok Choy soup using the zucchini noodles. For me, this is a gluten free, healthy alternative to pasta noodles.

First, we’d like to say, “Thanks!” to all of the military folks for your support.  It made it a wild week around here but so worth it!  Feels good to be able to provide a service for those in need.  Second, to all of our customers….we’d like to apologize for getting this posted on the blog so late. Sorry.

It is starting to get chilly Upcountry on Maui.  I know because I wake up pretty darn early and then don’t even attempt to get out of the bed until my husband has brought  coffee to me in bed and it’s fully light outside.  I love this time of year. Oven roasted veggies and sautéed greens with curry and ginger seem like they will be on the menu just to warm things up a bit .  I wonder what you will do with yours?!

I’m so excited for fall!  It is my most favorite season.  Comfort foods abound.  Maybe because the days are getting cooler Upcountry and I can justify eating lots of soup.  Little known fact…I LOVE SOUP!  When I lived in Chicago, I attempted a Raw Food Diet for a few months until it got cold. Out went that diet.  I know you can make raw soups but you can’t heat anything over 118 degrees, so that just wasn’t working for me in the winter.  Lucky, we live Hawaii, eh?
