Roxanne’s Easy Eggplant Parmesan

1 large Eggplant, Sliced into 1/4 in. slices
Spray Cooking oil – olive, macadamia nut oil, other
Salt
1 jar of tomato pasta sauce (homemade is best!)
1/4 c. grated parmesan cheese
1/2 c. grated mozzarella cheese
1 tablespoon finely chopped basil
1 tablespoon finely chopped oregano
Preheat oven 400 degrees. Wash eggplant & slice into 1/4 in. slices. Spray or grease a baking sheet with olive oil. Spread out the eggplant slices and spray with cooking spray.Sprinkle each slice with salt. Bake for about 20 minutes or until eggplant starts to brown. Pull it out & spoon pasta sauce onto each slice until covered. Mix grated cheeses & fresh herbs together & sprinkle generously on top. Put pan back in the oven & cook until cheese starts to brown & is bubbly. Serve with bread or over pasta.
